Wedding Cakes, Should You Save the Top?
Some wedding cake traditions—such as cramming a piece of cake into the bride’s mouth—have definitely had their day. And then there’s the old tradition of saving the top tier of the cake to eat on your one-year anniversary…
While a romantic idea, this plan has some downsides: even with moisture-proof wrapping, wedding
cakes still won’t keep well for more than a few months. And, saving the entire top tier of your cake to eat later means paying for more cake to serve your guests at the reception.
A nice compromise is to save just one piece and share it after your honeymoon. Be sure to wrap the piece well in plastic and set it in a box to protect it from jostling, then freeze it right away. When you’re ready to enjoy it again, thaw the cake in the refrigerator, not at room temperature.
