Wedding Cakes, Should You Save the Top?

Some wedding cake traditions—such as cramming a piece of cake into the bride’s mouth—have definitely had their day.  And then there’s the old tradition of saving the top tier of the cake to eat on your one-year anniversary…

While a romantic idea, this plan has some downsides: even with moisture-proof wrapping, wedding cakes still won’t keep well for more than a few months.  And, saving the entire top tier of your cake to eat later means paying for more cake to serve your guests at the reception.

A nice compromise is to save just one piece and share it after your honeymoon.  Be sure to wrap the piece well in plastic and set it in a box to protect it from jostling, then freeze it right away.  When you’re ready to enjoy it again, thaw the cake in the refrigerator, not at room temperature.

Most of the country would laugh at us here in Southern California talking about “winter weddings”.  Even though we can have garden weddings almost year round, we still experience a change in the air, that gives us the same winter imagery that the rest of the country feels.  And, we still most definitely can plan a winter themed wedding.
